This trend is of great concern for the European wine industry, as it has a negative impact on the quality of wine, it becomes an obstacle to international trade and endangers the compatibility of moderate wine consomption with a healthy lifestyle.

Increasing temperature in the European wine producing regions is having a negative impact on this sector. Climate change causes a lack of balance between the technological and phenolic maturation of grapes and, as a consequence, the increase of alcohol in wines.

The European CoolWine project proposes a two-way strategy to reduce ethanol yield during wine fermentation.
1: Adaptative evolution of wine yeasts guided by laboratory models.
2: Guided assembly by improved community model including S. cerevisiae as well as alternative yeast species.

CoolWine is an European project ERA CoBioTech in which 6 partners from four countries participate, RODA being the only company. ERA CoBioTech is an action of ERA-Net Cofund under H2020, whose objective is to strengthen the European Research Area (ERA) in the field of biotechnology.
