CIRSION
Wine from selected bunches where the grapes have matured exceptionally.
In 1995 we discovered that some vines produced grapes whose flavor was very different to the one of the vines around them. They produced a sensation of fullness, of volume, with notes that were more alike to a wine than to a grape. Two years later, we made our first CIRSION, which we did not commercialize, and we tested that with a short aging, the wine reached a level of incredible silkiness and a fruit complexity out of the ordinary. Each vintage we walk through the vineyards looking for this curious natural peculiarity, and that’s how, one in a thousand, the CIRSION grapes are picked.

CLIMATIC CYCLE

40ºC in the shade on the 13th of August, and highs of 32,5ºC in summer. A very rainy winter (rain and snow). 529,3 mm. of precipitations in the vine-growing year.

Excellent spring and bud break => Great vegetative expression. A historically warm summer which caused great water demand. The old bush vineyards endured well.

Rainfall during the first fortnight of September. The harvest improved at the end.

TASTING

Colour:

Very deep, with a high layer and a dark cherry background. Notes of evolution can be seen on the edging, curiously more than in 2001, although it is younger.


Nose:

It is deep, with many mineral notes and slightly smoky. The fruit is very ripe with a black profile and some red flashes. The set of the nose is of great depth. In the background there is a certain sensation of liquor, mixed with aromatic plants and black cocoa reminiscent of a liqueur and herbs chocolate.


Palate:

It is very voluminous and very friendly, covering the mouth with aromas and flavors of candied and liqueur fruits. The hot vintage that was 2003 is perfectly noticeable but it is very well interpreted.

The tannin is impeccable and at the same time the density and aerial character can be appreciated. The aftertaste is very long and pleasant with the sensation of a liqueur of cherries and plums.
