CIRSION
Wine from selected bunches where the grapes have matured exceptionally.
In 1995 we discovered that some vines produced grapes whose flavor was very different to the one of the vines around them. They produced a sensation of fullness, of volume, with notes that were more alike to a wine than to a grape. Two years later, we made our first CIRSION, which we did not commercialize, and we tested that with a short aging, the wine reached a level of incredible silkiness and a fruit complexity out of the ordinary. Each vintage we walk through the vineyards looking for this curious natural peculiarity, and that’s how, one in a thousand, the CIRSION grapes are picked.

CLIMATIC CYCLE

The miraculous harvest. Damp winter. 445,3 mm. of precipitations in the vine-growing year. Several storms in August, there was hail on the 2nd and 3rd of August.

Stormy rains and heat in September which caused some outbreaks of botrytis (September, 1 to 10). From the 11th of September until the end of the harvest was a dry and sunny weather with northerly winds that dried the outbreaks of botrytis.

The days were warm and the nights were fresh. The harvest changed radically.

TASTING

Colour:

Very deep with a dark cherry background. A slight evolution can be seen in the rim but the whole presents an appearance of a very young wine, with liveliness.


Nose:

It is very intense, with great finesse and delicacy. There is great depth and blackness. The fruit is mainly black but shoots of red fruit sprout from the bottom of the cup. The sensation of rain that the wind brings, dragging the aromas of the freshly wet earth, are mixed with some notes of violets. Cocoa, cedar wood from the cigar box and sweet spices appear in perfect combination.


Palate:

It is voluminous and fresh, with great fullness and at the same time lightness. The retronasal route is very powerful and the whole is elegant and delicate.

The fruit is very ripe but maintains its freshness and is reminiscent of black and red berries. There are many spices and a sensation of minerals, earth and rain. The tannin is very elegant and fresh.

The aftertaste is very long and at the bottom of the mouth remains the memory of elegance and freshness.
